Ground cinnamon provides all the cinnamon flavor, but you can also steep the simple syrup with cinnamon sticks.

Light brown sugar sweetens the creamer with a little bit of caramelized flavor reminiscent of homemade cinnamon roll buns.

Vanilla and butter extracts for enhancing the flavor and capturing the rich butter in a cinnamon roll.

Heavy cream and whole milk make up the base of this coffee creamer.

A non-dairy milk such as oat or almond may be substituted to make a mostly vegan version of this coffee creamer, although it won’t be nearly as creamy. (Butter extract is not dairy-free)

How to Make Cinnamon Roll Coffee Creamer at Home

  1. In a small saucepan over medium heat, bring brown sugar and water to a boil, then reduce the temperature and stir until all the brown sugar has dissolved. Stir in the cinnamon and simmer for about 2 minutes.
  2. Remove the simple syrup sugar mixture from the heat and add in both the vanilla and butter extracts.
  3. Whisk in the heavy cream and milk until combined. Funnel the creamer into a jar and refrigerate.

Recipe Notes

Add extracts off-heat. To avoid flavor burn-off, add both extracts after removing the syrup from the stove.

Use the freshest ingredients. If you begin with heavy cream that expires in a day, so too will the creamer. That’s why I always opt for milk and cream with expiration dates at least a week away.

Infuse with cinnamon sticks instead of ground cinnamon, if desired. If you don’t want bits of cinnamon floating in the creamer or settling to the bottom of the jar, use cinnamon sticks instead. I would suggest steeping them in the brown sugar syrup for a minimum of 10 minutes.
