The best way to describe the taste of cookie butter is spiced, caramelized gingerbread.
This flavor is based on traditional speculoos shortbread cookies. You may know them as Lotus Biscoff cookies.

- Light Brown Sugar
- Water

Cookie butter spread is melted into a sauce and is what gives this creamer the rich taste of cookie butter.
It comes in a jar just like peanut butter. Make sure to get creamy, not crunchy.
Use your favorite brand. I really like Biscoff. I know many are huge fans of Trader Joe’s Speculoos Cookie Butter, as well.
Light brown sugar sweetens the coffee creamer a touch more and adds even more caramelized molasses flavor. I opt for light brown sugar, but if you want even deeper notes of molasses, try it with dark brown sugar.
Water is combined with the brown sugar to make a quick simple syrup that the cookie butter spread is mixed into.
My recommendation when adding water to any recipe is to use filtered water. You can use bottled water or a Brita water filter pitcher works great.
Heavy cream and whole milk make up the cream base. Heavy whipping cream gives the creamer a rich feel and whole milk thins it out a bit.
For a dairy-free alternative, sub in an equal amount of your preferred non-dairy milk.
How to Make Cookie Butter Creamer
- In a small saucepan over medium heat, combine light brown sugar and water, stirring until sugar is dissolved (about 1 minute). Do not boil.
- Whisk the cookie butter spread into the brown sugar simple syrup until there are no lumps. Remove from heat.
- Slowly add heavy cream and milk to cookie butter syrup and whisk until combined. Funnel the creamer into a glass bottle and store in the refrigerator.

Recipe Notes & Variations
Use fresh ingredients for the longest-lasting creamer. Your homemade creamer will be good through the closest expiration date of the milk or cream, so don’t make it with products that are about to expire.
Lower sugar version. Skip the brown sugar and water and simply melt the cookie butter over low heat, then whisk it into the cream mixture.
Sweetened Condensed Milk: I’m not a fan of recipes that call for a partial can of sweetened condensed milk, but if you find yourself with some leftovers, you can use it to make a richer version of this creamer.
Simply replace the water in the recipe with 1/2 cup condensed milk.
Cinnamon: To really bring home the spiced flavor of speculoos cookies, add 1-2 teaspoons of ground cinnamon to the syrup/sauce mixture.
Best Milk to Make Dairy-Free Cookie Butter Creamer
Almond goes well with the warm spices in cookie butter and I would recommend it when making this creamer as non-dairy.
